yum upgrade forces outdated packages to be removed, while yum update may or may not do so. Removing outdated packages can be dangerous because it may remove packages you use.
This makes yum update more secure.
yum upgrade and yum update will perform the same function, which will update to the latest current version of the package.
But the difference is that Upgrade will remove outdated packages, while Update will keep them.
